Asian Inspired Tuna Croquettes

  •  2 potatoes                                                                                                        
  • 1 tin of tuna (in spring water)
  • 2 slices of wholemeal toast – processed into breadcrumbs
  • A handful of frozen peas and / or sweetcorn
  • 25g unsalted soft butter
  • 1 tbsp lime juice
  • 1 tsp coriander
  • pepper (seasoning)
  1. Preheat oven to 200°C / Gas Mark 6 & lightly grease a baking tray.
  2. Peel the potatoes, cut into small pieces & put on the hob to boil.
  3. Defrost frozen vegetables in a small cup of boiling water & drain.
  4. Drain tuna, break up in a bowl & add the vegetables, lime juice, coriander & pepper.
  5. Once potatoes are cooked drain, mash and mix with tuna mixture, then stir in butter.
  6. With clean hands shape the mixture into small sausage shapes, then roll each one in the breadcrumbs until well covered and place onto the baking tray. You should make between 20-24 croquettes.
  7. Bake in the oven for 20-25 minutes, until golden brown and cooked through.
  8. Serve warm with vegetables (for example, broccoli and cherry tomatoes).
  9. To freeze divide into freezer bags. 
  10. To reheat from frozen put in the oven on a medium heat for about 10 minutes, until warmed through.
